Piper nigrum is a species of the Piperaceae family, cultivated for its dried fruit. The fruit is a drupe (approximately 5 mm) that can be used whole or in powdered form. Our pepper is available in black, white or green varieties, the difference being the degree of ripeness of the kernel. It is harvested at the ideal moment to obtain the desired coloration (black, white and/or green). Once harvested, it needs to be boiled for five minutes, then dried with hot air for 72 hours to ensure optimal drying conditions to preserve the fruit.
• Black pepper is harvested halfway through its maturation; it is the most used in the world since ancient times.
• White pepper is a fully ripe, unshelled bean; it is slightly milder than black pepper.
It is harvested year-round.
A central support pole is needed, typically using a tree from the area. The pepper plant grows for 14 years. We prune every two weeks to prevent the plant from growing too much and thus facilitate the harvesting process. The yield from one plant averages two kilos during the first years of harvesting and at most, it can produce six kilos.
